How do I start an activity and record a track?

I'm using offlinemaps 3.12
This is an awesome app! I love it.

But how do I record a track? Some online searching suggests to start an activity.. but I can't figure out how! I've spent an embarrassingly long time trying to figure this out hahah

Any help would be appreciated.
